Fish with Frosting

This is actually adapted from a recipe we found years ago in the Seattle Times and is freakishly good. Our cool friend Laurie isn’t the biggest fan of halibut, yet when we made this for her she was all over it. Please only use the freshest halibut and the best Parmesan you can find, as there are so few ingredients they need to be good. For four people, preheat your oven to 450, then combine 2 Tb. mayo, 1 tsp. fresh lemon juice, about 1 Tb. of verrrry finely minced garlic, 1 tsp. Dijon mustard, a big ol’ dash of Tabasco, and 2 Tb. Parmesan cheese. Mix this all up and set it aside. Place 4 halibut fillets (around 4 to 6 oz. each) on a broiler pan, and season them with lemon juice, salt, and pepper. Bake till done, which is usually about 10 minutes per inch of thickness. Remove the pan, turn your oven up to broil, spread the ‘frosting’ all over the top of the halibut, and put it back in to broil about 1 minute or till the topping gets all gold and gooey. Serve this with something green – we like broccoli with salt, a little olive oil and some toasted pine nuts; add a nice Italian Orvieto, and you will be extremely happy!
