Marges’ Peanut Butter Fudge
Posted in: Uncategorized
So my nickname for my best friend Jean is Marge, and hers for me is also Marge. I don’t know why we call each other Marge, but we do – I think it happened several years ago and much tequila was involved. Anyway, this is her recipe for what we call fudge, but put any thoughts of teeth shaking overly sweet crap right out of your minds. This stuff is food of the freakin’ gods; you can have it for breakfast, give it to the kids, feed it to your granny or your dog – it’s all good. In case of a national or even local emergency you could live on this stuff, so make some soon. SO good. You’ll need: 1 1/2 C. chunky natural peanut butter (please don’t use Jif), 1 C. non-fat dry milk powder, 1/2 C. honey, 1/4 C. ground flaxseed, 1 T. cornstarch, 1 t. cinnamon, 1/2 t. vanilla, 1/2 C. raisins and/or 1/2 C. tiny chocolate chips. Stir this all together till it’s blended then push it into a loaf pan sprayed with non-stick spray. If you’re a little slutty like me sprinkle more chocolate chips on top, or you can use just a little cinnamon if you’re more moderate. Let it sit in the fridge for a couple of days, then eat it in small delightful squares and thank my friend, Marge!
